The reply

A review lands at any hour. Within about fifteen minutes Marco has read it and written back the way you would: calm, specific, and unmistakably your restaurant.
You tell him once how your place talks. Warm and short, formal, a little dry. From then on every reply matches, so guests hear you and not a support desk. And he answers in the language the review was written in, so the French couple gets French back without you reaching for a translator.

Google puts it plainly: replying to reviews shows customers you value their feedback, and positive reviews with helpful replies help a business stand out. Answering some of them is easy. Answering all of them, fast, is the part nobody manages by hand, and it is the part a guest notices when your newest review is not the one everybody ignored.

Control
You decide how much runs without you.
Nothing goes out behind your back. Your first three replies always come to you as a draft, so you hear how he sounds before he ever speaks for you.
Once you have approved those three, Marco asks whether he may start handling the friendly ones himself. He never makes that call on his own. Say yes and you draw the line: let him post the four and five star replies, and keep the rest for your eyes.
Only the drafts you approve count towards those three. Skipping one does not.
New reviews
He does not only answer reviews. He brings them in.
The guests who had a wonderful evening almost never think to write about it. Marco asks them, shortly after they visited, by email or by WhatsApp.
Politely, and only once by email if they would rather not hear from you again. The email goes out in the guest's own language, so the German table on holiday gets German and the Japanese couple gets Japanese. Ten languages in all, picked from their phone number.

The email invitation, in whichever language fits the guest. The WhatsApp message is in Dutch.
Google says it in one line: more reviews and positive ratings can help your local ranking. The catch is that the guests who would gladly leave one are exactly the guests who walk out happy and never think of it again. Being asked, once and at the right moment, is the whole difference between a quiet page and a busy one.

He asks at the right moment, never in the middle of the night.
The invitation lands about three hours after the visit, while the evening is still fresh in their mind. You can set that anywhere between two and six hours.
Nothing goes out at night. Anything due between midnight and the early morning waits until nine o'clock. And a request that gets stuck somewhere is cancelled after a day rather than turning up a week late.
