Why doesn't restaurant review management work without an open feedback culture?

Restaurant review management only works when a restaurant treats feedback as input for the product, not as a reputation risk to be polished away. Top chef Syrco Bakker has his team improve dishes using techniques from other kitchens and family recipes. The same mindset applies to guest reviews: restaurants that collect and act on feedback systematically end up with a better menu and a stronger Google ranking.

How do you turn reviews into useful input?

Feedback only pays off when three steps happen consistently. Collection happens right after the visit, by email, text message or WhatsApp. Negative signals come in privately first, so the kitchen or front of house can respond before they turn into a public review. Public reviews on Google, TripAdvisor, Booking and Facebook each get a reply, so guests can see that their feedback leads somewhere.

Why do guests feel free to share feedback?

Syrco Bakker argues that people need to feel free and confident to give feedback. For guests, that means a short, personal request at the right moment, not a generic survey weeks later.

What do you do with criticism of a dish?

Bakker tests a different preparation of his duck dish and looks at which version works better. When a review criticises a specific dish, you can test it in the kitchen the same way, instead of just replying to it.

Why should every review get a reply?

A review without a reply shows that nobody is listening. A reply on Google shows new guests that feedback makes a difference, and an active profile helps your local ranking.

I have some experience, but I want to learn, and I can learn from my team.

Frequently asked questions

When is the best time to ask a guest for a review?

The best moment is shortly after the visit, while the experience is still fresh. Typically that means within a few hours to a day, through a channel the guest already uses, such as email, text message or WhatsApp. The later the request arrives, the lower the chance of a response and the less specific the feedback on dishes or service becomes.

How do you stop negative feedback from going public straight away?

A common approach is to ask guests about their experience privately first. Unhappy guests can then communicate directly with the restaurant, and the team can fix or explain the issue before the guest writes a public review. Guests must always remain free to post a public review, though.

How does review feedback improve the menu?

Reviews often mention specific dishes, portions or preparations. When those comments make their way back to the kitchen, the team can test and compare variations, just as Syrco Bakker does with input from his team. That turns guest feedback into a steady source of product improvement rather than a one-off reputation issue.

Do you need to respond on every review platform?

Guests read reviews on Google, TripAdvisor, Booking and Facebook. If a restaurant only responds on one platform, questions and complaints go unanswered elsewhere. Replying consistently on every platform shows guests everywhere that the restaurant is listening. Automation keeps that manageable, even across multiple locations.

So I think it's very important that we create an environment where people feel free, feel confident to give their feedback and also to say like, oh, you did this duck dish. I learned to make this duck dish in another restaurant in a different way. Okay, let's try and let's see what's better.

But also somebody can say, oh, I have this family recipe from my grandma and she always cooked it in this way. Oh, let's try it as well. Because I think, I really believe, like, um, to create this, this, um, this, this dimension, um, it makes the creation stronger.

Um, because yeah, I have some experience, but, um, I want to learn and, and, and I can learn from, from my team. And I think it's very important to... and for me, it's also more refreshing.

And I also feel it's... Cirque du Soleil is a story of the people, right? The people, the producers, the Cirque du Soleil family, which is the team.

So yeah, it would be... it's actually very, very nice when we can represent my kitchen team and all the individuals in the menu.
